Receta: Patatas con lágrimas ibéricas - Recipe: Potatoes with Iberian boneless country-style pork ribs.

Hace mucho que no comparto con vosotras una receta de cocina, así que aquí os traigo ésta, a ver si os gusta.

Ingredientes para 2 personas:

*2 patatas de tamaño mediano (yo usé una grande y una pequeña).
*2 lágrimas ibéricas cortadas en trozos pequeños (cada una cortada en 4 ó 5 trozos). La lágrima es la carne que está entre las costillas. Supongo que en cada sitio se llamarán de una manera.
*Un diente de ajo.
*Perejil.
*Una hoja de laurel.
*Pimentón dulce.
*Sal (sólo un poquito).
*Aceite de oliva: yo he usado virgen extra.
*Agua.



Preparación.

En una sartén con un poquito de aceite se rehogan las lágrimas ibéricas, para que se vayan dorando un poquito.
Cortamos las patatas como para tortilla y las rehogamos en la sartén junto con una hoja de laurel y una cucharadita de pimentón dulce.



En el mortero majamos el diente de ajo y una cucharada de perejil picado.



Llenamos el mortero de agua y lo volcamos en la sartén con las patatas. Rellenamos de agua hasta cubrirlas y añadimos un poquito de sal.
Añadimos las lágrimas ibéricas cortadas en trozos y dejamos que hierva 20 minutos.



Tapamos la sartén de manera que pueda evaporarse parte del caldo.



Y aquí tenéis el resultado: un plato para chuparse los dedos.
Si no encontráis lágrimas ibéricas, podéis hacerlo con costillas adobadas.

It's been quite a while since the last time I shared a recipe with you, so here I am with this one, which I hope you'll like.

Ingredients for 2:

*2 potatoes (medium size, though I used a larger one and a small one). 
*2 boneless pork ribs, cut into small pieces (each one is cut into 4 or 5 pieces). These are known in Spanish as 'Pork tears' and the name refers to the pork meat between the ribs. I guess it will have a different name in other places.
*A clove of garlic.
*Parsley.
*One bay leaf.
*Sweet paprika.
*Salt (just a pinch).
*Olive oil. I used extra virgin olive oil.
*Water.

Preparation.

In a pan with a dash of olive oil in, sauté the boneless pork ribs and cook until golden.



Cut the potatoes as if they were to be used for a Spanish omelette and sauté in a pan together with the bay leaf and a teaspoon of sweet paprika.



In a mortar, crush the clove of garlic together with a tablespoon of mashed parsley. Fill the mortar with water and add the mixture to the pan with the potatoes. Fill with water until you cover them and add a pinch of salt.



Then add the pork ribs, cut into pieces and let boil for 20 minutes.



Cover the pan in a way that part of the stock can still evaporate.

And here is the result: finger-licking goodness!.
If you can't find Iberian boneless pork ribs, you can use marinated ribs instead.
